Potato, Beef, and Bean Casserole


  • 8 cups Mr. Dell's Southern Style
  • 1 lb. lean ground beef
  • 1 medium onion, chopped
  • Dried parsley flakes
  • 1 10.75-oz. can nacho cheese soup
  • 1 15-oz. can red kidney beans
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat oven to 400º F.
  2. In 400º F skillet, brown ground beef, onions, and 1 tablespoon dried parsley flakes.
  3. While meat is browning, mix Mr. Dell's Potatoes and 1/2 of nacho cheese soup in another bowl. When meat is browned spoon off excess fat, if any, and add kidney beans, remaining half of nacho cheese soup, salt & pepper.
  4. In greased 2-quart deep-dish casserole layer 1/2 of potato mixture, add entire meat mixture and top with remaining potato mixture.
  5. Sprinkle with 1 teaspoon parsley flakes.
  6. Bake uncovered for 40-45 minutes.
